Pesto Salmon and Roasted Sweet Potatoes Recipe

Pesto Salmon

  • 2 6 oz pieces of salmon
  • 4 Tbsp prepared pesto
  • 2 small sweet potatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 – 2 Tbsp canola or extra-virgin olive oil
  • cooking spray


Preheat oven to 425 degrees.

Cut sweet potatoes into cubes about one to two inches in size. Place in bowl. Toss with the basil, oregano, pepper, salt and oil. Place on baking sheet in single layer and put into oven.

Place salmon on baking sheet that has been covered with tinfoil and sprayed with cooking spray. Spread pesto over top of each piece of salmon evenly. Place in oven.

Sweet potatoes are done when they are soft to the touch and slightly browned at the tips. (About 20 minutes).

Salmon should take about 10-15 minutes.
